Tarte Tartin
A French dessert of apples in an upside down pastry top, so like an open caramel apple tart.
You could use homemade short crust pastry for this or change the apples for other goodies like pears, plums, peach and even bananas (but use under ripe ones).
Try making individual ones in blini pans, you can pre prepare them and just whack in the oven 10-15 minutes before needed.

Ingredients
6 apples -sharp eating ones
200g puff pastry
2 tablespoons water
150g caster sugar
80g butter
1 vanilla pod (op)
Method
- Prepare the apples -peel, core and quarter
- Prepare the pastry -roll to 3 mm thick and a round 2 cm bigger than the pan (ovenproof) your using to cook with.
- Prick with a fork all over
- Heat a frying pan that can go in the oven
- Melt the butter and add the sugar and water
- Boil to a caramel -light brown, bubbling thickened sauce
- Take aside, half the vanilla pod and scrape in the vanilla seeds -stir in
- Place in the apples rounded side down in a neat line around the outside and then fill the middle neatly with the rest
- Cover with the puff pastry, tucking over the edges
- Bake in a preheated oven on the top shelf gas 6/200*c for 25 minutes or until golden, crispy and bubbling round the sides
- Carefully turn on to a plate and serve with cream
