Jelly of Summer Fruits - Mint Cream

Try an assortment of summer Berries, soft fruits like plums, nectarines and peaches and de-stoned black cherries. complimentary alcoholic drinks are kirsch, port, sherry, marsala, peach snaps, pimms, or other fruit liqueurs like limonella.

Preparation time: 20 minutes plus setting time.   Quantity: Makes 8 slices   Cooking time: 5 minutes

Ingredients

520g/ 20 oz fresh fruits
200g/ 8 oz caster sugar
300 ml/1/2 pint water
1 tablespoon liquor
1 tablespoon lemon juice
1 tablespoon gelatine

Optional mint cream
6-8 mint leaves
1 teaspoon caster sugar
200 ml double cream

Method

  • Prepare, deseed, skin and slice the fruits
  • Place in neatish rows in a cling film lined loaf tin
  • Boil the sugar and water
  • Add the juice, gelatine and liqueur and simmer for a few minutes till dissolved
  • Cool slightly
  • Pour on to the fruits and set in the fridge, 4 hours plus or preferably overnight
  • To make the mint cream- simply whisk the cream with the sugar to soft peaks and add the chopped mint
