Lemon Posset
Preparation time: 5 minutes plus cooling and setting time. Quantity: Serves 4-6 Cooking time: 10 minutes
Ingredients
900 ml/ 1&1/2 pints double cream
280g/ 10 oz caster sugar
3 juicy lemons- zest and juice
Method
- Boil the cream and sugar, till dissolved
- Add the zest and juice of the lemons
- Cool slightly
- Pour in to individual serving glasses
- Leave to set for several hours or over night
