Exotic Fruit Sabayon

Sabayon is the French exivilent to the Italian Zabaglioni. Pour over any fruit you fancy, Strawberries are nice with a Pimms Sabayon.

Preparation time: 5 minutes   Quantity: Serves 4   Cooking time: 5-10 minutes

Ingredients

2 large egg yolks
50g/ 2 oz caster sugar
120 m/4 fl oz dry white wine

1 kiwi
1 star fruit
1 passion fruit- seeds and flesh only
1/2 mango
1/2 paw paw
1 banana

Method

  • Whisk the sugar and egg yolks over a Bain Marie/ place in a bowl over a pan of

simmering water

  • Whisk constantly till the eggs are paler, frothy and increased in size
  • Whisk in the alcohol, whisk till light and aerated
  • Meanwhile prepare the fruit, peel, slice and lay neatly on 4 plates
  • Pour/spoon over the Sabayon

Grill till golden brown and serve
