Fresh Lemon and Lime Mayonnaise

Fresh Mayonnaise is so different from some of the gloopy bought varieties. You realize how much oil goes in to it when making it yourself. Water lightens it as well as bulking it out and make sure you season well- it takes quite a lot of salt- to bring out the flavour.

Preparation time: 15 minutes   Quantity: Makes approx 1/2 pint- large jar  

Ingredients

1 large organic egg
1 lime juice and grated zest
1 lemon juice and grated zest
1 teaspoon dried mustard powder
300ml oil (use olive, rapeseed or sunflower)

Method

  • Process or whisk - the egg, mustard, zest and juice
  • Season well and then drizzle the oil in slowly- processing or whisking the whole time until all incorporated and smooth
  • Add 1 tablespoon water and store in the fridge
