Spicy Asian Red Pesto
The perfect accompaniment to a grilled Lamb chomp with a few Asian greens on the side like pak choi or served with B.B.Q meats or even rubbed in to a beef joint the day before cooking. For a Vegetarian idea, stir fry in to noodles.
Preparation time: 10-15 minutes Quantity: Makes 1 large jar full
Ingredients
100g/ 4 oz cashew nuts
1 roasted red pepper -skinned and chopped
1 garlic clove - crushed
1 teaspoon fresh grated ginger
1 -2 red chillies - de-seeded and chopped
2-3 kaffir lime leaves
1/2 lemon grass - sliced and chopped
1 lime juice and zest
2 tablespoons fresh coriander -chopped
1 tablespoon fish sauce -nam plah
1 tablespoon sesame oil
3 tablespoons sunflower oil
few twists black pepper
