Malaysian Nasi Goreng - Spiced Fried Rice and Vegetables

My version of Nasi goreng is Vegetarian, but traditionally chicken is added or other meats!

Preparation time: 15 minutes   Quantity: Serves 4   Cooking time: 10-15 minutes

Ingredients

1 tablespoon oil
1 red onion,diced
2 sticks chopped -celery
1 red pepper- diced
1 carrot- finely diced
1 clove garlic, minced
1 teaspoon chilli paste/sauce

450g/ 16 oz cooked rice (8 oz raw weight)
80g/ 3 oz peas
80g/ 3 oz sweet- corn

1/2 pint vegetarian stock
1/2 tablespoon light soya sauce
2 spring onions chopped/sliced
1 tablespoon crushed peanuts

1/2 lime juice (optional)
1/2 tablespoon chopped coriander (optional)

Method

  • In a large frying pan or wok heat the oil
  • Stir-fry the onions, pepper, celery and carrots, cook with out colour, till soft
  • Add the chilli paste and garlic
  • Add the rice and stir round till warm
  • Add the stock, soy, peas and corn- heat till very hot- season to taste
  • Serve with the peanuts, spring onion and coriander sprinkled on top - squeeze over the lime
