Sate Sauce – Peanut Dipping Sauce
This is a rich flavoursome sauce really good for grilled or B.B.Q chicken or serve with skewers of meats. Sate sauce also works well with grilled Aubergines for a vegetarian alternative or mix in to blanched cauliflower, sprinkled with spring onion and coriander leaves for an alternative salad side dish. Make CookeryClubs sweet potato, sate fish cakes with left over peanut sauce.
Preparation time: 5 minutes Quantity: Serves 8 – 10 portions / approx. 400g Cooking time: 7 – 10 minutes
Ingredients
1/2 jar / 130g crunchy peanut butter
2 tablespoons light soy sauce
1/2 fresh squeezed lime (optional)
1/3 -1/2 block solid coconut (75-100g)
1 clove crushed garlic
1/4 inch grated ginger
2 sliced spring onions (optional)
150 ml / 5 fl oz/ 1/4 pint water
Plus extra water to form the consistency you like
Method
- Simply place all the ingredients in a pan (except the extra water)
- Cook for a minute or two allowing the mix to cook gently and thicken
- When it doesn’t thicken any more, add extra water to achieve the thickness you desire – I prefer a thick sauce
- Serve hot or cold, store in a sealed jar in the fridge
- For a spicy Sate just add 1/4 finely chopped green chilli at the beginning
