Sambal Kacang - Peanut Sauce II - Sate Sauce
Peanut sauce goes with Gado Gado an Indonesian vegetable salad, as a dip with kebabs, or grilled meats or bound with par-cooked cauliflower and fresh coriander for an unusual side dish.
Preparation time: 20 minutes Quantity: Serves 6-8 Cooking time: 10 minutes
Ingredients
100ml vegetable oil
225g unsalted peanuts
2 cloves crushed garlic
1 medium red onion
1/2 teaspoon chilli powder
1 teaspoon brown sugar
1 tablespoon dark soy sauce
450ml water
1 fresh lemon juice

Method
- Heat the oil and cook the peanuts for 3-4 minutes, without browning
- Separate the nuts from the oil, reserve both and cool
- Grind the nuts in a pestle and mortar-
place in to a bowl
- Grind the garlic and onion with a little salt
- Fry in 1 tablespoon of reserved oil for 1 minute
- Add the chilli powder, sugar, soy sauce,water and bring this to the boil
- Add the ground peanuts, cook gently for 6-8 minutes till thickened and squeeze in the lemon
- Cool
- Keep in a sealed jar in the fridge.
- Peanut sauce will last for a week or so
