Simple Salmon, Mange Tout and Mango Green Curry
On the table in less than 15 minutes - well if you get a shifty on! Perfect served in a bowl with a timbal of sticky rice plonked in the middle. Use the recipe search to look up more quick and easy - “Simple” recipes.

Ingredients
2 tablespoons oil
225 g / 8 oz fresh salmon - chunky diced, skin off
1 heaped teaspoon green curry paste
8 - 10 mange tout
200 g / 1/2 tin coconut milk
1/4 fresh mango - skinned and diced (or 100 g tinned )
1/2 teaspoon fish sauce (optional)
1/2 fresh lime juice (optional)
1 tablespoon corriander leaves (optional)
Method
- Heat the oil in a frying pan or wok
- Gently toss the salmon in for a minute until sealed (gently does it, salmon is tender)
- Add the curry paste and stir in for half a minute
- Add the mange tout and toss round
- Pour in the coconut milk and gently simmer until the salmon is firm and cooked and the sauce is reduced slightly approx. 3 - 4 minutes
- Stir in the fish sauce, lime juice and corriander
- Serve
