Thai Sweet and Sour Pork
A really quick to cook stir fry based dish. Yet scrumptious to eat. You can replace the pork with chicken or turkey.
Preparation time: 10 - 12 minutes Quantity: serves 4 Cooking time: 12 - 15 minutes
Ingredients
2 tablespoons vegetable oil
2 – 3 cloves garlic
1 small/ medium red onion - sliced
300g / 10 oz pork escallops or lean pork – cut in to thin strips
2 tablespoons fish sauce – nam plah
1 tablespoon caster or light brown sugar
1 red pepper – sliced
1/4 – 1/3 cucumber – stripped / julienne
2 tomatoes – cut in to 1/8th wedges
1 small tin pineapple chunks or rings cut in to chunks plus juice
2 spring onions - sliced
1 tablespoon chopped coriander leaf (op)
1 teaspoon sesame seeds (op)

Method
- Heat the oil in a large frying pan or wok
- Fry of the onions and garlic until golden, soft but not burnt
- Add the pork strips and fry until browned and sealed
- Add the fish sauce and sugar, stir in for a few seconds
- Add the tomatoes, cucumber and peppers and stir-fry for several minutes
- Add the pineapple juice and cook the dish until the pork is cooked and the vegetables are just cooked but with a bite
- Stir in the pineapple chunks and the spring onions
- Add a few twists of black pepper or Szechwan pepper corns and a touch of salt if you think it needs it!
- Serve with a sprinkling of coriander leaves and sesame seeds (op)
