Hot Spicy Mussels - Hoi Tod

A lovely hot and sweet blend of fresh chilli, garlic and brown sugar to intensify the flavour of fresh shelled Mussels

Preparation time: 15 minutes   Quantity: Serves 2   Cooking time: 5 - 10 minutes

Ingredients

1 kilo/2 lbs fresh mussels- cleaned
1 medium onion thinly sliced
2 cloves crushed garlic
1 tablespoon chilli paste
or 1 fresh chopped red chilli
1 fresh lime juice
1 teaspoon light brown sugar
160g/ 3 oz bean sprouts
1 tablespoon chopped Thai basil
seasoning

Method

  • Pan fry the onions, till soft
  • Add the garlic, lime juice, sugar and chilli
  • Add the mussels, cover and cook for 5 minutes or until all the mussels open
  • Discard any unopened mussels
  • Add the beanshoots, seasoning and basil
  • Serve
