Thai Yellow Curry Paste

Preparation time: 10-15 minutes   Quantity: Enough to make 8 -10 portions of curry   Cooking time: 2 minutes

Ingredients

15 dried yellow/red chillies, chopped
2 teaspoon cumin seeds
2 teaspoon coriander seeds
1 teaspoon ground cinnamon
1 teaspoon salt
1 teaspoon ground cloves
2 chopped lemon grass
50g/2 oz chopped shallots
chopped garlic
3 cloves crushed garlic
1 tablespoon turmeric
1 tablespoon oil

Method

  • Place the chopped chillies in warm water and soak for 10 minutes to soften
  • Dry fry the cumin and coriander seeds to release the flavour- without burning- approx. 1 minute
  • Drain the chillies
  • Pound or whizz/process, all the ingredients to a paste
  • Store in the fridge
