Red Onion and Tamarind Soup

A light broth soup packed full of onions - a super food packed full of calcium and folic acid as well as being an antioxidant with detoxifying qualities.

Preparation time: 5-10 minutes   Quantity: Serves 2-3   Cooking time: 15 minutes

Ingredients

1 tablespoon olive oil
300g/ 10 oz red onions -peeled and sliced
1 clove garlic -crushed
1 tablespoon red wine vinegar
1 teaspoon brown sugar
1&1/2 pints/ 850 ml veggie stock
(or 1 pint stock & 1/2 pint red wine)
1/2 teaspoon tamarind paste
seasoning

Method

  • Heat the oil
  • Sauté the onions gently for several minutes to soften
  • Add the garlic, vinegar and sugar and cook till light golden brown, stirring frequently
  • Add the stock (and wine) bring to the boil then

simmer for 10 minutes

  • Stir in the tamarind paste and season
  • Boil for 1-2 minutes
  • Serve
