Indonesian Style Sausages - Beef, Pork, coconut, chili and lime
Indonesian flavours are divine, I love Gado Gado and Satays, and the curries are delicious. My inspiration for these came from a Chicken Sate recipe I have.
Preparation time: 1 hour + Quantity: Makes 8 - 10 portions Cooking time: 10 - 15 minutes
Ingredients
300g minced pork
200g minced beef
1 clove crushed garlic
1 teaspoon grated galangal
1/2 teaspoon ground coriander
60g freshly grated coconut (or unsweetened)
1 lime zest and juice
1 finely diced red chilli and seeds
1 tablespoons coriander leaves chopped
1/2 teaspoon shrimp paste
1 egg white
60g fresh breadcrumbs
1/3 teaspoon salt
15 twists black pepper
Method
- Simply mix all the Ingredients together and leave to infuse overnight or for 30 minutes or so
- Stuff in to soaked sausage skins- see chocolate sausages for method
