Peanut Fritters
Preparation time: 10 - 15 minutes Quantity: Makes 9 Cooking time: 5 - 10 minutes
Ingredients
50g rice flour
1/2 teaspoon baking powder
1 clove garlic-crushed
1/2 teaspoon ground coriander
1/2 teaspoon ground cumin
1/2 teaspoon turmeric
50g peanuts-crushed
125-150 ml coconut milk

Method
- Mix everything except the coconut milk together
- Whisk in the coconut milk -to make a firm but smooth batter
- Shallow fry spoonfuls in hot oil, turning when crisp and brown
