Yamas - Small Sweet Spanish Bites
A traditional Spanish sweet bite, made with carrots- usually eaten after a meal or with coffee or tea. Their name translates to yolks as they are sometimes made with egg yolks.
Preparation time: 20 minutes Quantity: Makes 40-50 small balls/canapés
Ingredients
300g carrots- cooked and pureed/mashed
300g desiccated coconut
300g caster sugar
2 tablespoons of coconut to roll in.
50 paper baskets
Method
- Put the cooked, mashed carrots
in a bowl
- Add sugar and coconut and mix
- Get a spoonful and form a ball with your wet hands
- Roll them in coconut
- Put in the paper baskets
- Chill till needed
