Kentucky Fried Chicken
My version of the processed kind ! Which is very easy to make. Spice it up by adding more chilli powder and serve with a creamy yogurt dip.
Preparation time: 20 minutes Quantity: Serves 2 - 4 Cooking time: 10 - 15 minutes
Ingredients
8 chicken drumsticks
Kentucky Marinade -
1/2 fresh lemon juice
1 tablespoons paprika
1 tablespoons olive oil
1 tsp light soy and a
few twists of black pepper
Kentucky Batter -
150g / 6 oz self raising flour - sieved
2 teaspoons vinegar
1/2 teaspoons each of ground cumin, paprika, cinnamon and turmeric
1 crushed garlic clove
1/4 grated white onion
1/4 teaspoon chilli powder (optional)
1/4 teaspoon each of salt and black ground pepper
water to mix
Method
- De-skin and score 8 chicken drumsticks (slashing in to the flesh 3 - 4 times each drumstick
- Steam till just cooked for 8-10 minutes (alternatively bake covered in tin foil in a little water for 12 - 14 minutes)
- Cool a little
- Mix the ingredients for the marinade together
- Mix in to the chicken and leave for a minimum of 20 minutes
- Whisk the ingredients for the Kentucky batter together with enough water to mix in to a thick batter – whipped cream consistency
- Heat a fryer to a medium hot, approx. 170*c
- Dip the chicken in to the batter till well coated . Shake of any excess
- Deep fry till golden brown (lay the chicken in the hot oil gently, making sure not to fry your fingers and when letting go push away from you so if any oil flicks it flicks away from your face)
- Remember to agitate the chicken when cooking for an even brown colour
- Serve with a good dip
