Meat Samosas

Samosas can be made mini sized or large.
For a healthier version bake for 15-20 minutes in the oven. You can freeze them cooked or uncooked.

Preparation time: 20-30 minutes   Quantity: Makes 12 small   Cooking time: 20 minutes or so

Ingredients

½ finely chopped onion
1 clove crushed garlic
¼ teaspoon each of chilli powder
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon turmeric
1 inch grated ginger
¼ lb./ 250g minced beef or lamb
1 egg white
coriander, mint or flat parsley (optional)

Method

  • Sauté in a little oil to soft without colour onion, garlic, chilli powder, cumin, coriander,turmeric and ginger
  • Then add minced beef or lamb until cooked
  • Cool the mix in a bowl and then add egg white, season and add herbs
  • Roll up in spring roll pastry, samosa paste or filo pastry
  • Lay rectangles of pastry out, brush the edges with the left over egg yolk mixed with a little milk
  • Roll into samosa triangles
  • Bake or deep-fry them
