Sweetcorn Fritters / Cakes
Serve with a chili jam as a starter or as part of a buffet or as a picnic bite or as a canapé. Alternatively make larger ones as a side dish or as a base to a dish.
Preparation time: 10 minutes Quantity: Serves 4 Cooking time: 5 - 10 minutes
Ingredients
75g/ 3 oz plain flour
1 teaspoon vinegar
½ teaspoon baking powder
salt and pepper
enough water or milk to bind
1 tin/ 260g drained and rinsed sweetcorn
Method
- Make up a really thick batter the consistency of glue or whipped cream by whisking the flour, vinegar, baking powder and seasoning with enough water or milk to bind
- Mix in the sweetcorn
- When ready fry spoonfuls in a hot oiled pan
- Turn over and add a touch more oil cook until golden brown and firm to the touch
