Caramelized Sugar – for pulling, setting or spinning

Fancy spinning some sugar - make the caramelized sugar, allow to cool for less than a minute until the sugar becomes syrupy and do your stuff.

Ingredients

250 g / 8 oz clean caster sugar
100 ml water
50 g / 2 teaspoons glucose syrup

Method

  • Boil in a very clean and dry saucepan
  • Brush the sides down while cooking with clean cold water and a clean brush
  • When the temperature reaches 160c / crack / golden brown –
  • Cool down a little by placing the pan in a bowl of cold water
  • Use as required
