Caramelized Sugar – for pulling, setting or spinning
Fancy spinning some sugar - make the caramelized sugar, allow to cool for less than a minute until the sugar becomes syrupy and do your stuff.
Ingredients
250 g / 8 oz clean caster sugar
100 ml water
50 g / 2 teaspoons glucose syrup
Method
- Boil in a very clean and dry saucepan
- Brush the sides down while cooking with clean cold water and a clean brush
- When the temperature reaches 160c / crack / golden brown –
- Cool down a little by placing the pan in a bowl of cold water
- Use as required
