Tapioca
My earliest memory of Tapioca is when the dinner ladies at school use to colour it with green food colouring and call it frog spawn at Halloween.
Especially popular with the older generation - they know what’s good for them, milk equals calcium, perfect food for the young and the old.
Preparation time: minutes Quantity: serves 2 - 3 Cooking time: 10 minutes
Ingredients
1 pint / 550 ml milk (any)
2 - 3 tablespoons sugar caster or granulated
110 g / 4 oz tapioca (pearl)
Thinner Tapioca -
add an extra 50 - 80 ml more milk
Serve with -
Jam, golden syrup, honey, maple syrup, fresh fruit or compote.
Method
- Bring the milk to the boil
- Shake in the sugar
- Stir in the tapioca
- Simmer for 5 - 6 minutes, stirring occasionally until the tapioca has absorbed the milk
