Christmas Chutney
I came up with this recipe for a Christmas course with the cheese board and cold roast turkey in mind but it would be great any time of the year.
Preparation time: 15 minutes Quantity: Makes 1 jar Cooking time: 30 - 40 minutes
Ingredients
60 g / 2 oz apples - peeled and diced
60 g / 2 oz dried dates - chopped
60 g / 2 oz dried prunes - chopped
60 g / 2 oz dried cranberries
2 cm fresh grated ginger
1 clove garlic - crushed
150 ml red wine vinegar
120 g dark or light brown sugar
pinch all spice
pinch cinnamon
Method
- Place all the ingredients in a thick bottomed pan
- Simmer with a lid on for 30 minutes
- Remove the lid and cook for a further 5 minutes or so until the mix is thick and sticky.
- Spoon in to a sterilized jar, top with a wax disc (optional) and store in a cool dark place until needed
