Fattoush - Lebanese Bread Salad

As with all Mediterranean salads the tastes are sublime - it beats limp lettuce and some of granny's shop bought coleslaw any day!!!

Preparation time: 15 - 20 minutes   Quantity: Serves 5 - 6   Cooking time: 5 minutes

Ingredients

Sauce/ Dressing –
1 clove crushed garlic
1/2 teaspoon salt
1/2 teaspoon pepper
1 bunch chopped mint
120 ml fresh lemon juice
100 ml olive oil

Salad –
1/2 loaf flat bread or 4 pitta breads
4 leaves romaine lettuce, torn into 2 cm pieces 1/2 cucumber – small diced
1 tomato – small diced, skin, seeds and all
4 spring onions – small chopped
1/2 red pepper – small diced
1/2 tin/ approx. 120g chickpeas - washed

Method

  • Mix all the ingredients for the sauce together and set aside until needed
  • Bake the bread in a preheated oven gas 6 / 200*c for 5 minutes or until crispy and golden (keep an eye on it)
  • Break by hand in to 1 inch pieces - cool slightly
  • Mix all the salad ingredients together
  • Toss with the dressing
  • Serve
  • Tip - don’t leave to stand around all the bread will go to soggy, if you want to make ahead, leave the bread, salad ingredients and sauce separately and simply mix when needed
