Mushrooms Stuffed with Bacon and Blue Cheese

This basic stuffing can be used to stuff peppers, tomatoes, courgettes etc.

Preparation time: 15 minutes   Quantity: Make 2 main courses/ 4 portions starter   Cooking time: 15 - 20 minutes

Ingredients

4 large open cup mushrooms

Stuffing:
1 rasher sliced bacon
1/2 onion finely chopped
2 spring onions sliced
1/2 red pepper finely chopped
1 sliced stem celery
1 clove crushed garlic
90g/ 3 oz bread crumbs
a handful of herbs
60g blue cheese - stilton, cashel, dolchelata - crumbled

Method

  • Optional- you can bake them first with a little crushed garlic, salt and pepper and butter to improve flavour
  • To make the stuffing –sauté 1 rasher sliced bacon until brown then add onion, spring onions, red pepper celery, garlic
  • Cook until soft, cool, pour in a bowl
  • Add bread crumbs, a handful of herbs then season
  • Fill the open mushrooms, top with crumbled cheese and bake –10/15 mins in a medium oven
