Carrot, Lemon and Coriander Soup

A scrumptious soup with a vibrant colour and sweet savory taste. For a simple carrot soup simply omit the apple.

Preparation time: 10 -15 minutes   Quantity: Serves 6   Cooking time: 35 minutes

Ingredients

1 tablespoon olive oil or 30g /1 oz butter
1 large onion - diced
1 clove garlic - crushed
450g / 1 lb. carrots - peeled and sliced
1 potato - peeled and diced
2 pints stock or 1 cube and 2 pints hot water
1 lemon zest and juice
3 tablespoons coriander leaf - chopped

Method

  • Heat the oil or butter in a large pan-fry of the onions gently to soften
  • Add the garlic and lemon zest and cook for 1/2 minute to boost flavour
  • Add the carrots and potato stir round for a minute
  • Pour over the stock
  • Bring to the boil then
  • Simmer for 30 minutes or until the carrots and potato are tender / soft
  • Blend / liquidise / puree till smooth
  • Add the coriander and fresh lemon juice
  • Taste and season to taste
  • Bring back to the boil and serve
