Basic Vegetable Soup

A basic recipe with un-basic taste. Use a mixture of vegetables like 2-3 carrots, 2 parsnips, 1/4 cauliflower etc or use 1 lb. of a single vegetable like carrots for carrot soup or broccoli for broccoli soup - or add a spice, herb or particular cheese. For broccoli and stilton Soup use 1 lb. or so of broccoli and 60g of stilton

Preparation time: 10 - 15 minutes   Quantity: Serves 3 - 4   Cooking time: 20 - 30 minutes

Ingredients

2 tablespoons olive oil
1 onion diced
1 stick chopped celery
1 clove crushed garlic
1 lb & 4 oz/ 550g any diced, peeled, prepared – fresh vegetables.
1 medium peeled, diced potato
1/2 stock cube (chicken or vegetable)(optional)
1&1/2 pints/ 30 fl oz/ 900 ml water (or milk or 1/2 water and 1/2 milk)

Method

  • Heat a pan with the oil, fry the onion, garlic and celery - till soft but without colour
  • Add the vegetables cook till slightly soft without colour
  • Add the diced potato
  • Add 1/2 stock cube (optional) to 1 &1/2 pints of hot water (or milk for a creamy soup)
  • Simmer for 15 -20 minutes or till all the vegetables are tender/soft
  • Liquidize / whiz up in a blender
  • Season to taste, add a few fresh herbs (optional) and Serve
