Harira / Moroccan Ramadan Soup
There are many varieties of this soup -The Harira is the national soup of Morroco.
During 30 days of Ramadan, each household prepares this fragrant dish and it is eaten along with dates, or honey sweeties(Chabakkia, briouats with almonds and honey).
Preparation time: 15 minutes Quantity: Serves 4 Cooking time: 1 hour 10 minutes
Ingredients
120g/ 4 oz small diced beef or lamb
120g/ 4 oz chick peas
1 diced onion
(op) few celery leaves
¼ teaspoon saffron
¼ teaspoon grated ginger
150 ml/2 ½ pints water
2 tablespoon tomato puree
60g/ 2 oz vermicelli (pasta)
30g/ 1 oz plain flour and up to ½ pint extra water

Method
- Place beef or lamb, chick peas, celery, saffron, ginger and water all in a big pot boil for 1 hour
- Add tomato puree and pasta and boil for 10 minutes
- Mix the flour and extra water to a paste and add along with chopped parsley and coriander
salt and pepper to taste
