Mucver - Courgette and Feta Cakes
The Turkish dish of Mucver (pronounced moo-j-vear) is one of my favorites and its so easy to make.
Serve with roasted new potatoes tossed in sea salt and olive oil and roasted for 30-40 minutes and a light salad.
Preparation time: 20 minutes Quantity: Makes 4 Cooking time: 10 minutes
Ingredients
2 courgettes -medium
1 carrot -medium
1 block feta cheese
2 eggs- medium
2 tablespoons plain flour
1 tablespoon chopped parsley
1 teaspoon fresh dill- chopped
touch chilli powder
1/2 teaspoon ground cumin
touch dried thyme
olive oil to fry
Method
- Grate the peeled carrot and grate
- Top and tail the courgettes and grate
- Crumble the feta cheese
- Mix everything together
- Heat up a pan with 3-4 tablespoons olive oil
- Fry a hand full at a time, pushing it down with a palette knife to flatten add more in the pan if space
- Cook till golden brown and turn over till golden on both sides
- Serve
