Mexican Style Sausages - Mixed bean, tomato salsa and Jalapeno

One of three Vegetarian sausage recipes, this is based on refried beans and makes a great starter as well as a Vegetarian option on the B.B.Q.

Preparation time: 30-40 minutes   Quantity: Makes 8 - 12 portions   Cooking time: 10 - 15 minutes

Ingredients

1 minced diced onion
1 clove crushed garlic
1 teaspoon grated ginger
1 small tin 175g black eye beans
1 small tin 175g kidney beans
2 pickled jalapeno peppers, finely diced/ minced
1 tablespoon tomato puree
2 tinned plum tomatoes- finely diced
1/2 lemon juiced
1/2 lemon zest
80g fresh breadcrumbs
1 tablespoon chopped coriander
1 egg
1/3 teaspoon salt
15 twists black pepper

Method

  • Drain, wash and puree roughly the beans
  • Add all else/ finely chopped or minced ingredients
  • Stuff in to vegetarian skins or roll and cover in breadcrumbs
  • To breadcrumb – 1st coat in flour, 2nd coat in beaten egg and 3 rd coat in fresh breadcrumbs
  • Cook by baking in the oven or deep frying
  • Or roll individual sausage shapes in cling Film and stem till cooked/ firm
