Italian Tuscan Tuna and Bean Salad

This traditional bean salad is fresh, nutritious, quick and makes a perfect lunch.

Preparation time: 10 minutes   Quantity: Serves 2  

Ingredients

1xtin/175g cannelloni beans (washed)
(or use pre soaked dried beans-cooked till soft)
1 plum tomatoes-1/2 slices
1 inch cucumber -1/2 slices
1/2 red pepper- thinly sliced
1/2 tin/ g tuna in oil or spring water
5-6 olives
1-2 tablespoons virgin olive oil
1 tablespoon fresh lemon juice
1 teaspoon chopped flat parsley
seasoning

Method

  • Simply arrange all the ingredients on a plate, sprinkle on the beans and gently crumble the tuna/flakes on top
  • Mix the oil, lemon, parsley and seasoning together and pour over the salad
