Confit of Salmon
Salmon cooked in a bath of olive oil infused with herbs and spices. Rendering the fish full flavoured and delicately soft. Serve as a starter on a bed of leaves and a suitable compote, salsa or sauce.
Quantity: Makes 4 x starter portions Cooking time: 45 minutes
Ingredients
Confit Oil -
250 ml / 1/2 pint olive oil
1 lemon - zest and juiced
2 - 3 star anise
3 - 4 peppercorns
2 - 3 bay leaves
3 inch piece thyme
4 x 90g / 3 oz salmon fillets / slices - skin on
Method
- Heat the olive oil with all the spices and herbs to infuse all the flavours together, don’t boil just heat up approx. 3 - 4 minutes.
- Place the salmon in a suitable small deep ovenproof tray approx. 5 inch.
- Pour over the oil and all the spices and herbs.
- Bake in a preheated oven gas 3 / 160*c / 325*f - for 45 minutes or until the fish is firm and set.
- Allow to cool slightly in the oil.
- Shake of any excess oil before serving warm or cold.
