Brazilian Chicken Soup

A broth full of flavour and goodness. Perfect food when your feeling rundown - chicken is known to reduce flem especially good when you’ve got a cold.

Preparation time: 15 minutes   Quantity: Serves 4 - 5   Cooking time: 1 &1/2 hours

Ingredients

2 chicken legs
550 ml / 1 pint water

2 tablespoon vegetable oil
2 onions -small diced
2 cloves garlic - thinly sliced
2 large potatoes - small diced
1 green pepper - small diced
3 plum tomatoes - tinned or fresh - chopped
1 glass / 80 ml white wine
120g / 4 oz rice
60g / 2 oz peas - fresh or frozen

Method

  • Boil the chicken legs in the water with a lid on for 3/4 hour or until the chicken is tender and comes of the bone easily
  • Strain the liquid and reserve
  • Remover the chicken from the bone, shred a little and set aside
  • Meanwhile heat the oil
  • Cook of the onion, to soften but without colour
  • Add the garlic, potatoes and peppers and cook for several minutes
  • Add the wine and cook for a further couple of minutes
  • Add the rice and chicken cooking liquor and allow to simmer for 20 minutes until the rice is cooked
  • Add the chicken and peas and allow a few minutes to warm through
  • Season to taste
  • Add a handful of fresh chopped parsley - optional
