Irish - Potato and Chicken Stock Soup

A traditional basic Broth, serve with a hard crusty bread and a slab of butter or Boxty.

Preparation time: 15 - 20 minutes   Quantity: Serves 4-6   Cooking time: 15 - 20 minutes

Ingredients

6 medium/large potatoes-diced
3 medium onions- diced
2 pints fresh chicken stock
1 tablespoon butter
1 tablespoon chopped parsley
seasoning

Method

  • Melt the butter and cook the onions and potatoes without colour till the onions go soft
  • Add the stock and parsley

boil for 15 - 20 minutes until the potatoes are soft

  • Serve as a Broth or Puree/whizz for a smooth soup
  • Season to taste
