Turkish Delight Rice Pudding

This recipe was donated to one of my friends, who couldn’t be bothered to put it on her self - did you know you can add your own recipes and that way you get a mention - unlike my friend who will remain nameless! Anyway she tells me this is terrific and one day I will give it a try, when I’ve got through my list!

Preparation time: 15 minutes   Quantity: Serves 3 - 4   Cooking time: 45 - 50 minutes

Ingredients

150 g pudding or rissotto rice
450 ml milk (any)
100 g icing or caster sugar
300 ml whipping cream
2 tablespoons rose water

Method

  • Cook the rice for 5 minutes in cold water (after bringing to the boil)
  • Drain
  • Place in an ovenproof dish
  • Add the milk and half of the sugar
  • Cover with a lid
  • Bake in a preheated oven 40 - 45 minutes
  • Leave to cool
  • Whisk the cream with the remaining sugar and rose water
  • Fold in to the cold rice and serve
