Lightly Spiced Pork Koftas

Great to make with the children. Perfect for the B.B.Q. Serve with a cooling yogurt dip and a well dressed salad. You could also make these in to burger.

Preparation time: 30 minutes   Quantity: serves 4  

Ingredients

1 tablespoon olive oil
1 onion - finely chopped
1/2 teaspoon ground cumin
1/2 teaspoon ground coriander
1/4 teaspoon turmeric
1/4 teaspoon ground chilli powder or chilli flakes
2 clove garlic - crushed

450 g / 1 lb. minced pork
60 g / 2 oz breadcrumbs
1 egg white
1 teaspoon tomato puree (optional)
seasoning

8 skewers - soaked in water to prevent burning

Method

  • Heat the oil in a frying pan
  • Cook the onion to soften
  • Add the spices and cook out for a minute to release the flavour
  • Add the garlic, cooking for only a few seconds more
  • Remove from the heat and cool
  • Mix the rest of the ingredients together and the slightly cooled onion and spice mix
  • Season well
  • Mix the ingredients well, preferably by hand
  • With clean damp hands mould on to the soaked skewers
  • Grill, bake or B.B.Q until firm and cooked approx. 12 - 15 minutes
