Turkey or Chicken Crown

Christmas Day or Thanks Giving or just because - a roast bird cooked in this way remains moist and extremely tasty with the added bonus of making it’s own gravy

Ingredients

Turkey or Chicken Crown
butter
streaky bacon
water, stock or wine

Bed of Vegetables -
2-3 cloves garlic - crushed un-peeled
2 carrots - chopped un-peeled
2 onions cut in half peeled
1 leek chopped in rough 3 - 4 cm pieces (op)
handful of herbs

Method

  • Place Turkey or Chicken Crown in a roasting tin on a slice of bread to stop sticking etc.
  • Loosen the skin and rub 1/2 oz of butter per lb. under the skin
  • Season well, cover with strips of streaky bacon
  • Pour in 1/2 inch of water, stock or wine
  • Roast in a medium oven - gas 6-7/150-160c for 15 minutes per lb.
  • Or on a high heat for 30 minutes then turn down to medium roast


Variations - roast on a bed of chopped vegetables and garlic with a little extra water or wine - then with the juices and stock left in the dish after cooking - make the gravy by simply thickening with tomato puree - strain and serve
