Fried Gherkins
A firm favorite in Southern America. Serve as a unique party bite with a cooling yogurt dip.
But basically the batter would accommodate any food, within reason - try stuffed picked chilies or spice in up and batter baby corn.
Preparation time: 10 minutes Quantity: Makes 8 or so for snacks Cooking time: 8 minutes or so
Ingredients
100g/ 4 oz plain flour
25g/ 1 oz cornflour
1 teaspoon baking powder
1 teaspoon any vinegar
1 egg -small
250 ml very cold water
seasoning
200g/ 8 oz large gherkins or dill pickles
oil for frying
Method
- Sieve the flour, cornflour and baking powder
- Beat in the egg, vinegar and enough water to make a thick batter
- Season
- Heat a pan with approx. 2 cm oil or deep fat frier
- Slice the gherkins or pickles- 1-2 cm slices
- Dip in the batter, coat well, shake of excess
- Fry till golden on both sides
