Boston Brown Bread
Preparation time: 15 minutes Quantity: Serves 6-8 Cooking time: 2 hours
Ingredients
250g/ 8 oz strong or plain flour
1/4 teaspoon salt
1 teaspoon bicarbonate of soda
90g/ 3 oz currants
90g/ 3 oz black treacle
225 ml / 8 fl oz any milk
Method
- Sift the flour, add the salt and bicarbonate
- Stir in the currants
- Stir in the treacle and mix in the milk
- Mix by hand to form a dough
- Knead for a few minutes
- Place in to a greased 1lb loaf tin
- Cook in a bain marie (place the loaf tin in a roasting tin 1/2 filled with water )
- Cook in the middle of the oven gas 3/170*c for about 2 hours or until firm
