Mississippi Mud Pie

A coffee and chocolate layered biscuit based tart. A great ending to an American themed dinner.

Preparation time: 30 minutes   Quantity: Serves 12   Cooking time: 5 minutes for base

Ingredients

Biscuit base -
280g/ 10 oz chocolate digestive biscuits
90g/ 3 oz butter

1st layer -
300g/ 10 oz /2 bars dark chocolate
2 teaspoons strong coffee
3 tablespoons whipping cream

2nd layer -
250g/ 9 oz marshmallows
4 tablespoon milk
400 ml / 3/4 pint whipping cream

Variation top -
150g white chocolate -melted
3-4 tablespoon cream

Method

  • Crush the biscuits
  • Melt the butter -stir in the biscuits-till well coated
  • Leave aside to cool
  • Melt the chocolate in short bursts in the microwave or over a pan of simmering water
  • Stir in the coffee and cream
  • Pour on to the base-leave to set in the fridge
  • Melt the marshmallows and milk together
  • Meanwhile whisk the cream
  • Stir the cream and marshmallow mix together
  • Spoon on top of the chocolate layer
  • If you want to top with the variation layer just melt the white chocolate and stir in the cream-spoon on top of the chilled coffee layer
