Cajun Spice Mix
Make up a batch and rub in to fish before grilling, or sprinkle on fried potatoes, or freshly baked jacket wedges, mix in to rice before braising in the oven or stir in to sauce, like Cajun gravy.
Preparation time: 10 minutes plus overnight salting Quantity: Makes a 50g batch or so
Ingredients
2 tablespoon salt (infused with 1 clove squashed garlic overnight)
1 tablespoon cayenne pepper
1 tablespoon chilli powder
2 tablespoon paprika
1 teaspoon hot chilli powder
1 tablespoon onion powder
1/2 teaspoon dried thyme
1/2 teaspoon dried basil
1/2 teaspoon oregano
1/2 teaspoon ground cumin
1/2 teaspoon mustard powder
1/8 teaspoon ground cloves
1 tablespoon freshly ground black pepper
Method
- Leave one clove of slightly squashed garlic with the salt overnight to absorb garlic flavour in to the salt
- Remove garlic
- Mix everything else with the salt
- Makes around 2oz/50g dry Cajun spice
- Store in a sealed jar
- Will stay fresh flavoured for a few months
