Pecan pie will keep for a few days and will freeze moderately well. Make the day before and warm to serve for a dinner party.

Preparation time: 20 - 30 minutes   Quantity: Serves 4 - 6 ish   Cooking time: 30 minutes

Ingredients

3 large whole eggs
175g / 7 oz soft brown sugar
150g/ 6 oz golden syrup
50g/ 2 oz melted butter
1 teaspoon vanilla essence
50g/2 oz sieved plain flour

Line a pastry case – ( ½ lb pastry mix) 1 large or 4-6 individual ones

Method

  • Whisk the eggs till pale and frothy. Whisk in sugar
  • Mix in gently the syrup, butter and essence.
  • Then gently fold in the flour
  • Pour on to the base
  • Lay in a neat pattern of pecans
  • Bake in a medium oven Gas 5 for 45 minutes/ small ones 30 minutes then turn the oven down till set 10 minutes or so
  • Serve alone or with a scoop of honey, maple or almond ice cream or a blob of crème fraîche or a touch of syrup
