Chocolate Squidge Slice
This is a cross between a soft brownie and a mousse but is rich, deep and addictive. Serve still warm with ice-cream. BUT beware the slice will be squidgy and not set like a cake so gently when you serve it, you won’t be able to remove it from the tin!
Preparation time: 10 minutes Quantity: 20 small squares Cooking time: 15 - 20 minutes
Ingredients
200 g / 8 oz butter – cubed and softened
200 g / 8 oz plain chocolate (70% coco) - broken
2 large eggs
100 g / 4 oz caster sugar or soft light brown
Method
- Place the chocolate pieces and butter cubes in to a bain marie ( a bowl above a saucepan of simmering water)
- Remove when melted, stir together
- Meanwhile whisk the eggs and the sugar together until pale, frothy and light
- Gently mix both mixes together
- Pour in to a greased tin / tray (approx. 28cm X 16cm)
- Place on the middle shelf of a pre-heated oven gas 4 / 18*c / ? * f – for 12 – 15 minutes or until firm and crispy on top but still squidgy underneath and in the middle
- Leave to cool in the tin
- Turn out and cut or cut in to fingers in the tin with a plastic utensil.
