Chocolate Chunk Brownie Ice-Cream

Ah, serve with CookeryClubs Hot Fudge Sauce

Preparation time: 20 minutes   Quantity: Serves 4-6   Cooking time: 10 minutes plus freezing time

Ingredients

250 ml/ 8 fl oz full fat milk
280 - 300 ml double cream
100g/ 4 oz caster sugar
30g/ 1 oz cocoa powder
6 large egg yolks
150g/ 6 oz chopped 70% chocolate
1 portion diced chocolate brownie (100g/ 4 oz)

Method

  • Bring the milk, cream, sugar and cocoa to the boil -stir
  • Pour on to - the egg yolks which have been pre whipped till lighted and frothy
  • Whisk to combine and pour back in to the saucepan
  • Gently heat, not even a simmer, for 3-4 minutes
  • The mixture should thicken to coat the back of a wooden spoon

(if over heated the mix will split)

  • Add 1/2 the chocolate and allow to melt in.

cool the mix- or pre-make the day before

  • Add the remaining chocolate and churn in to ice-cream- 5 minutes before the end stir in the chocolate brownie pieces
  • (or freeze with the brownie mixed in, stirring every 30-60 minutes till set)
