Portuguese Style Sausages
You don’t have to have a sausage machine to make sausages, you can stuff the skins with a piping bag - of course this can be quite time consuming- but well worth the effort every now and then. See CookeryClubs other Sausage recipes.
Preparation time: 1 hour + Quantity: Serves 8 - 10 Cooking time: 10 - 15 minutes
Ingredients
500g minced pork
1 red onion finely diced/minced
1 clove crushed garlic
1 measure port
50g diced/ minced roasted red peppers
40g diced/minced sun-blushed tomatoes
1 tablespoon tomato puree
60g fresh breadcrumbs
1/3 teaspoon salt
15 twists black pepper
Method
- Simply mix all the Ingredients together and leave to infuse overnight or for 30 minutes or so
- Stuff in to soaked sausage skins- see chocolate sausages for method
