Nectarine Sorbet

A really light summer Dessert - serve with summer fruits, after a heavy meal.

Preparation time: 15 minutes   Quantity: Serves 4   Cooking time: cooling and churning time

Ingredients

8 ripe nectarines
280/ 10 oz caster sugar
150 ml /5 fl oz water
80-100 ml/ 3 fl oz fresh lemon juice
1 Vanilla pod or 1 teaspoon vanilla essence

Method

  • Make a stock syrup by boiling the water, Vanilla and sugar together- reduce till slightly thickened.(boil=3-4 minutes)
  • Cool. (or make the day before)
  • Peel, de-stone and puree the nectarines
  • Add to the cooled stock syrup
  • Add to the ice-cream machine
