Spiced Baked Portuguese Sardines - Tapas
Sardines are so versatile- baked whole, marinated and baked, bones removed and stuffed, breaded and fried, made in to pate, floured and pan fried, grilled, B.B.Q whole or stuffed whole.
Preparation time: 10 minutes Quantity: Serves 4 Cooking time: 15-20 minutes
Ingredients
12-16 whole, gutted-sardines (3-4 per portion)
1 tablespoon olive oil
1 lemon juice and zest
1 teaspoon smoked paprika
1 teaspoon cayenne
1 tablespoon continental parsley
2 teaspoon sundried tomato paste
1/2 red chilli -de-seeded-chopped

Method
- Score the sardines with 3-4 slits down the body (remove the head and tail if you like)
- Mix all the ingredients together and rub in to the fish, outside and in
- Leave to marinate for 20 minutes minimum.
- Bake in a preheated oven Gas 6/200*c/400*f -for 15- 20 minutes
