Chorizo and Chickpea Fry - Tapas
Preparation time: 10 minutes Quantity: Serves 2 - 4 Cooking time: 8 - 10 minutes
Ingredients
2 tablespoon olive oil
1/2 red onion - medium diced
1/2 red pepper - medium diced
60g / 2 oz diced chorizo
1 clove garlic -crushed
1 tin chick peas - approx. 240g(or equivalent of soaked and cooked dried)
pinch saffron
1 tablespoon water
seasoning
Method
- Heat the oil
- Sauté of the onions and peppers for a minute or two, on a medium heat
- Add the chorizo, till golden
- Add the garlic and chickpeas
- Add a splash of water and the saffron and heat through
- Season and serve
