Potato Bravos - Tapas
Preparation time: 15 minutes Quantity: Makes 4 portions Cooking time: 30 - 50 minutes
Ingredients
Bravos Sauce
1 tin plum tomatoes
1 tin water
1 chopped onion
2 cloves garlic
1 stick celery
1/2 chopped red chilli
½ chopped carrot (optional)

2 tablespoons tomato puree
500g peeled diced potatoes
2 tablespoons olive oil
seasoning
Method
- Place all ingredients for the sauce, except the puree in a big pan and simmer for 30 –40 minutes
- Liquidise / blend the sauce till smooth
- Stir in the puree
- This will keep in the fridge for several days or can be frozen for several months
- Dice your potatoes toss in olive oil and season
- Pour on to a tray and bake in a hot oven for 25 –35 mins Gas 6 - 7 / 210*c / 420*f
- Place in a serving dish and cover in the spiced tomato sauce
