Greixonera de Brossat - Baked Cheese Custard

A Spanish baked cottage cheese dish dusted with cinnamon, serve with fresh fruits or baked figs.

Preparation time: 20 minutes   Quantity: Serves 4   Cooking time: 30 minutes

Ingredients

200g/ 8 oz cottage cheese
1 orange zest and juice
1/2 lemon zest
200g/ 8 oz caster sugar
4 egg yolks
4 egg whites
2 level teaspoons ground cinnamon -
mixed with 1 teaspoon caster sugar

Method

  • Beat the egg yolks with the sugar
  • Beat in the cottage cheese, zest and juice
  • Meanwhile whisk the whites till stiff
  • Mix everything together and spoon in to 4 ovenproof dishes
  • Sprinkle with the cinnamon and sugar mix
  • Bake in a preheated oven gas 6/200*c/400*f for about 25-30 minutes or until set
